With Christmas around the corner, baking is a given. I think there is nothing nicer than giving someone a gift from the heart that came from your kitchen. I think it’s also nice to make a little bit extra and have a very merry Christmas for yourself too… !
I have found lately I am steering towards cooking more natural desserts that have a bit of a medicinal effect on your body rather than a negative effect on your bottom. I am trying to cook with natural ingredients that have amazing benefits for the body and am finding myself making a lot of Vegan and raw food. One recipe which I came up with the other day was this slice. It’s super easy to make and if you have a natural foods pantry, chances are you have all of this already in your cupboard! I always cook to taste and texture. Sometimes ingredients might be drier than other times so always go by taste. I love chocolate and coconut and this tastes exactly like a coconut rough.
After a pretty hectic day of spreading the good word of Juice Plus, mum and I were stuffed, famished and looking for something a little naughty. Good combination. Especially when you have a bounty of food in the house with endless possibilities to create something that tastes amazing. Something that resembles ice cream but healthy enough to call dinner.
Basically, I am an ice-cream nut. I LOVE ice-cream. But I am also an ice-cream snob. As ice-cream is one of the most calorific things you can have, I advise to pick a brand you love so that you really enjoy the experience. My personal favourite is pistachio gelato or anything vanilla bean. But of course, when you are eating healthy to work towards your body goals, stuffing your face with pistachio gelato really isn’t the best idea. So you improvise…
Here is my favourite protein shake I modified. I am using the Vitamix now and I LOVE it. The measurements below are just estimates. I find that sometimes I have to add a bit more almond milk to get a runnier consistency so it’s still sip-able through a straw. If you are lucky to have a Vitamix, expect this in your belly in about 2 minutes from the time you start making it. Super fast, super delicious.
I will be honest, the last couple of days have been utter crap. So much stress. Work stress, DVD stress, body stress, modelling stress, stress about stress… I tend to let things get to me a little easily and we do the same. Today after some important plans fell through, I am sitting having a restorative day where I am catching up on my favourite TV shows, cooking and eating amazing food and of course, relaxing.
As you know, I am a self-confessed chocoholic. That being said, over the last year or so I have learnt how to practice restraint. The thing that did it for me was finding out how to work out how many teaspoons of fat and sugar were in my beloved goodies which made me feel sick to the stomach. Basically, if you want to have a lovely scare, divide the amount of sugar per serve by 4, and the fat by 5 and this will give you the measurement in teaspoons. So if something has 20 grams of sugar and 20 grams of fat, it has 5 teaspoons of sugar and 4 of fat. Make sense?
Anyway I am not fat bashing here as I am all for good fats in your diets but more often than not the chocolate we buy off the shelves has no nutritional benefit at all. Yes, I understand that dark chocolate is apparently ‘healthier’ but did you know some dark chocolates, well, most contain still about 50% sugar? Sugar is a friend that you don’t want to associate with anymore. The type of friend to try to fatten you up without you knowing about it. Also, cocoa does contain some amazing properties however, how do you know that the ones that are on the shelf are actually good for you or are they that heat-treated and processed that it’s now devoid of all nutrients?
